Owner and Chef Joe Fabrocini has a rich culinary background, starting with an apprenticeship at Matteo's Italian Restaurant in Honolulu at just 18 years old. He then worked under his father at the original Fab's Italian Kitchen in Tarzana, CA before opening his own establishment on Ventura Blvd in 1992. Together with his brother Vinnie, who now owns Fabrocini's Beverly Glen in Bel Air, Joe has crafted a unique dining experience at Fabrocini's Italian Kitchen. After a hiatus from the restaurant industry, Joe was inspired to open a hot dog restaurant following his travels around the country sampling different regional specialties. Drawing from his childhood memories in New Jersey, he introduced The Ripper to LA, a deep-fried delicacy previously exclusive to northern New Jersey. He also pays homage to Manhattan with snappy all-beef dogs topped with red onion sauce and sauerkraut. At Fab Hot Dogs, Joe uses only the finest east-coast dogs and artisan-made sausages, paired with homemade toppings and sauces. Be sure to ask "what's new" during your visit, as Joe loves surprising his customers with unique creations not listed on the menu.
