I worked at Kosei Ramen near Himeji City Hall and heard that the person I worked with has opened their own restaurant. I didn't notice until it was pointed out, but indeed the name "Kosei" is there! The manager is also a very nice and friendly person. The taste of the ramen seems to have been well researched and was of high quality comparable to Kosei Ramen. The manager mentioned that he loves rice and wants customers to eat a lot, hence the generous portion of cha-mayo rice bowl. The noodles were smooth and had a good texture, and the dipping sauce was served in a hot stone pot, not too thick, and was delicious with a good mix with the noodles. The pork slices in the dipping noodles were also satisfying. When you want to change the taste, adding lemon vinegar makes it milder and delicious. I forgot to take a picture, but the cha-mayo rice bowl was also delicious with a different taste from Kosei Ramen. I definitely want to go back. Thank you for the meal.
