Description

The Would Restaurant, originally part of the summer resort Hotel Di Prima, has been providing warm hospitality since 1926. Under new ownership in 1994 by Claire Winslow and Debra Dooley, this Hudson Valley retreat offers guests a relaxing atmosphere reminiscent of slower days. Guests can enjoy dining on the porch during summer evenings, and by a crackling fire in the winter, complete with white linen table cloths, candlelight, and fresh flowers. Our menu features a diverse selection of Contemporary American Cuisine made with locally sourced ingredients.

If your looking for a slightly out of the way restaurant then allow me to introduce you to The Would. Once there keep an open mind throughout the entire experience because when the evening is finished you’ll realize what a fantastic one it was. Drinks are made very well, and the food is cooked to perfection. Service is present when you need it. The only negative is that you’ll eventually need to leave. We invite you to try it out!

Went there for Valentines Day. Off-hand staff, waited for a table for 15 minutes, then waited about an hour for main course. When it arrived it was not what I ordered. Bear in mind we'd waited for an hour for it. Cancelled the dish and shared the one that did come. The staff then ate the wrong meal that I sent back at the bar. We paid and left, without an acknowledgement or apology of any kind. Ruined evening.

Our Valentine 's Day Dinner was exceptional. Both entrees were excellent. The steak is a longtime favorite of ours and was again just right. We tried the Game Hen for the first time. I highly recommend the hen, it was meaty and juicy. The vegetables that came with the hen were perfectly cooked. Cocktails were great and were made so as not to overwhelm the liquor with the taste of the mixer. This is our go to place and we were a little worried that Valentine 's Day might not be the best day to get good service. However, we were given flawless service with a smile. Thank you for a great dinner!

I made the reservations one week in advance on open table . I requested a corner table and stated that it was my sisters birthday. When we arrived the hostess seem to be surprised that we were a party of five. I mentioned that I made reservations she looked and then she said oh yes. On the way to the table I also mentioned that it was my sisters birthday and the hostess stated ,”it’s a short notice “. I told her that I mentioned it when I made the reservation she said “oh”. I think she may have been a little flustered because it was going to be a busy evening, Valentine’s Day. All the other times that I have gone to The Would she’s been the perfect hostess. The restaurant was decorated beautifully. The fireplace and the warmth of the fire made our dinner experience a cozy and enjoyable time. Other than those two issues , the food was delicious . Our server ,Thomas was attentive and we enjoyed our evening at The Would. .

Amazing food amazing wine amazing people. Your withdrawal is on point during COVID!!! Safe and hands down amazing choice in highlands.
