I sampled the Ecuadorian-style ceviche, which differs slightly from the Peruvian version. This ceviche is partially cooked rather than served raw and comes in a tomato-based broth. Bohemia offers both types, and I have to say, they are both delicious. My wife opted for the encebollado, a savory soup made with tuna and onions, and it was equally delightful.
