We stopped by Gibbon by chance for gas during our road trip, and stumbled upon this amazing Mexican restaurant. The food was incredible and the staff were very friendly, making our unexpected stop well worth it.

My recent visits to this restaurant have been quite disappointing. Normally, I would order the California Burrito with a side of rice and beans. However, on my last visit, the burrito was served on a paper plate and the cheese sauce came in a small plastic cup instead of being smothered on top. The burrito and cheese sauce were barely warm, while the rice and beans were nearly cold. The chipotle sauce I requested was missing, and the tortilla was cracked on both sides. It took a while for my order to be taken, but the food came out quickly once it was taken. I prefer my food to be served hot or at least warm, so this was disappointing. I can't understand why there was a temperature issue, as this was also the case on a recent takeout order. The total cost was nearly $15 including tip, even though I wasn't entirely satisfied with the meal. The portion size of the Super Nachos was small and nothing special. The atmosphere of the restaurant was unappealing, with chilly temperatures and considerable echoing. You must pay for water and bring cash to avoid a fee for using debit or credit cards. While these issues aren't huge by themselves, they contribute to an overall lack of quality in the food and service. I used to drive a few miles to enjoy the authentic Mexican food here, but it has not been up to par for a while now. Unfortunately, I will not be returning. **2 Stars**
