We tried the lambredotto in tomato sauce and it was amazing, the meat itself was juicy, fatty, and has a chewy texture, similar to eating tripe. It paired really well with the crunchiness of the bread and it soaked the sauce really well. I recommend getting the green hot sauce too to add more dimension to the flavor. There's quite a number of places within the city that sells Lambredotto but Da Nerbone is just such a stable place to get yours while in the Central Market! Line can be a bit slow when its crowded due to the canteen style service but I think its worth it. Very affordable too.
