I stumbled upon this wonderful vegan food truck last night while searching for a delicious plant-based meal before heading back to Salem, and wow, it exceeded my expectations! This is exactly what I've been looking for in Eugene. The food was fresh, organic, and reasonably priced, with much of it sourced from the owner's nearby organic farm. There was a fantastic variety of healthy, plant-based options, and even though it was nearly 8 PM, I was delighted to find that many choices were still available. Adjacent to the truck is a stunning garden, which I enjoyed exploring while waiting for my meal. I relaxed at a picnic table, watching vibrant hummingbirds buzzing around the flowers and chatting with the gardener who created this lovely spot. I'll definitely be back whenever I'm in Eugene and craving a freshly made, healthy all-vegan, all-natural meal!
