Incalm represents the ability to be elegant without being formal; to be innovative without being excessive; to serve pleasantly elaborate dishes containing territory and tradition. What about the quality of the ingredients: unexceptionable! Really good, really good. We now wait for spring to return and experience a new path. This evening we were accompanied to discover the Bacello menu with 7 courses all well balanced and well accompanied by a particular selection of glasses. Incalm deserves all the success he's having.
