All the meals were excellent, service very friendly, very professional, pure gastronomical experience, in a castle. The location is charming, restaurant with very few tables. Unique! A must try. An on top with very good prices for such a high standard restaurant. Menus range from 45 euros to 80 without drinks
We enjoyed watching a master chef prepare a sea bass cooked in puff pastry, one of Paul Bocuse's original recipes. Paul is the star, but at age ninety, he did not conduct the class, but it was taught by one of the instructors who held the rank of MOF (top chef after competing nationally). The fish baked in a choron sauce (reduction of red wined vinegar, shallots, egg yolk, clarified butter, tarragon, tomato paste, chervil, salt and pepper). Hey, it tasted very, very good. The Instituted is located in the western suburbs of Lyon, housed in an attractive fairy castle on lovely grounds. If you get the chance to take this tour, do so, a well spent two hours.
