Chapter One inaugura una nueva era que une la energía y pasión de Mickael Viljanen con la experiencia y mentoría de Ross Lewis, con el objetivo de crear una de las experiencias gastronómicas más singulares de Irlanda. El restaurante en el sótano de Mickael es un espacio elegante y sofisticado, decorado con arte impactante que cautiva a primera vista. Un servicio impecable acompaña una cocina centrada en ingredientes de lujo de primera calidad, como la langosta de Donegal o las mollejas Limousin, donde las técnicas clásicas francesas se combinan con sutiles toques modernos. La creatividad y personalidad de Mickael se reflejan en platos perfectamente equilibrados, ejecutados con precisión, con sabores naturales sublimes y una presentación exquisita. La icónica “Irish Coffee”, preparada en la sala, es, al igual que el resto, una experiencia inolvidable. El horario de almuerzo es de jueves a sábado, de 12:00 a 14:00, con la última orden para el Menú Degustación a la 1:30. La cena se sirve de martes a sábado, de 18:30 a 21:00. El restaurante permanece cerrado domingos y lunes. Debido a la nueva distribución del espacio, la disponibilidad para mesas de dos personas es limitada, pero existen más opciones para grupos de cuatro o seis. Se aceptan reservas para almuerzo y cena para grupos de 1 a 6 personas, y para privado en sala para grupos de 6 a 10. Este nuevo capítulo en Chapter One representa la fusión de culturas, nuevas alianzas, proveedores y equipo, que llevarán al restaurante a un nivel superior, con un enfoque firme en la excelencia y un estilo limpio y moderno. En Chapter One, la famosa bienvenida aguarda a los comensales, invitándolos a sumergirse en un comedor lujoso y a disfrutar de una experiencia gastronómica excepcional.

We initially tried to make a dinner reservation, but unfortunately, it was fully booked weeks in advance. This just goes to show how popular your restaurant is. My advice is to book well in advance! That said, the lunch menu was exceptional, the staff were delightful, and the atmosphere of the restaurant is fantastic. Be sure to visit and don’t miss out on trying the Irish Coffee to round off your meal; it’s the best I’ve ever had!
The staff is genuinely very friendly, and the food is exceptional. I had the trout as a starter, and it was the most amazing dish I’ve ever tasted in my life—simply beautiful. The dessert was a delightful surprise, featuring a variety of textures and flavors. It's an amazing place, and I highly recommend it!

Just amazing! We managed to get the chefs table for lunch, and what an experience it was. Kitchen team are on a different level and produce some of the best and creative dishes you will ever taste. Service is 10/10 and so attentive they notice the fine little things! The beetroot soup as an amuse-bouche kicked off the whole experience and you know from then on that you are in for a treat! Soufflé for dessert was the best I have ever had! Well done to everyone involved as this is by far the best restaurant in the country! Thank you.
We made reservation several months ago and I was afraid my expectations were too high. How wrong I was, my expectations were far exceeded. Art and taste in a dish. Tasting menu pairing with amazing wines.. What I liked the most was when chef came to our table. Thank you to all the professional staff, especially Jimmy, Exceptional experience.
