George's Bbq - Collierville
George's Bbq
Description
Tucked into a strip-center, this casual BBQ joint shines with well-smoked brisket, standout ribs and generous pulled pork, all paired with four house sauces and inventive sides like fried green beans, mac bites and zesty slaw. Portions are hearty, service friendly, and the made‑fresh approach means meats can sell out—order early for large orders. Burgers and occasional bland table sauce are minor detractors, but overall the spot delivers bold, smoky flavors and reliable BBQ that’s become a local favorite.

The brisket is some of the best I've had in a long time! It had a beautiful texture, a great bark and smoke ring, and a unique spicy flavor. I also ordered a few pounds of pork, which was very tasty, and some racks of ribs to complement the brisket. I will definitely be back and recommend ordering in advance if you're planning to get more than a few pounds of beef brisket! It's great to have a new BBQ spot in town!
I had the pulled pork sandwich with macaroni bites and coleslaw. While the later two were very good, the sandwich was less then stellar. The pork itself was tasty, but there was no BBQ sauce on it and the sauce at the table was bland. The bright side however was that there was plenty of pork on the sandwich.
I've been visiting this restaurant every two weeks for the past few months, and I've never been let down by the quality of the food or the service. Each meal has featured moist and flavorful meat. I've had the chance to sample nearly everything on the menu, and the ribs are the best I've ever had (I believe Memphis BBQ is the top contender). Make sure to come hungry, as the portions of pulled pork, chicken, and brisket are served generously on a Jumbo beer platter. The fried green beans make for a great side dish with a bit of spice. The homemade barbecue sauces provide a variety of options for almost everyone (there are four choices). George and the staff are friendly, and with delicious food, this has become my favorite BBQ spot.
I finally went to George's for a BBQ sandwich and sides and was very pleasantly surprised. I really didn't think you could do good BBQ in a strip center position. The pork sandwich with Cole Slaw was delicious and huge. I would put it there with one of the Memphis BBQ places. The Makkaroni bites were very good. The beans were good. They are a little on the sweet side, but very good, unless you don't like sweet. I will definitely go back
In a city renowned for its BBQ, it’s refreshing to find a place that offers a different style. George's leans more towards the made-fresh BBQ of Austin, TX, rather than the traditional Memphis approach. They prepare just enough BBQ for the day, so it's best to arrive early, as they sometimes run out—this is a testament to the quality of their food. On my first visit, we started with ribs, but couldn't resist trying the pulled pork, brisket, and smoked wings as well. Each dish was well-spiced and perfectly smoked, complemented by a variety of their homemade sauces. The sides were also unique compared to typical Memphis fare, featuring a zesty coleslaw and a non-traditional potato salad, both of which were excellent (they also offer fries and beans). The portion sizes were generous, and the staff was attentive throughout our meal. The only downside was that their burgers seemed somewhat lackluster compared to the rest of the menu, but I look forward to exploring more of their offerings in the future.
