If I can watch a 6 minute youtube video and make at home a carbonara that’s tastier and closer to the origin, that’s just sad. If you don’t know how to make it don’t serve it. They use fettuccine instead of spaghetti (no idea why) and pancetta instead of guanciale (which I can understand because we’re in Mexico). The execution is poor too. They cook the pancetta separately from the pasta without mixing them together and they just sprinkle it on the pasta before serving, so it doesn’t absorb the oil and flavor like it should. And this is a place that serves almost exclusively pasta (only two other non pasta mains) maybe the other ones are better. Size was quite small too.
