Amazing and unexpected flavor and texture combinations. I'd never think sashimi goes with fermented bean paste, or cornbread with caviar and dill cream. And that sweet pastry thing with duck liver mousse. All the shell fish very fresh and delicious. When Asian flavors were used, they were creatively and perfectly implemented.
