This place continues to deliver high quality cuisine, soundly based on tradition but refined and elegantly presented. On my last visit, potato gnocchi with a cheese cream were a standout dish, but also two desserts, one of chocolate with a passion fruit sauce, the other a tiramisu sphere , were remarkable for quality of ingredients and execution.

When I am in Trento and have the opportunity/time I never fail to make the drive to Brez to visit this Locanda it 's not as far as it seems, less than an hour and you are there. The dinner was brilliant, again. Two very elegant dishes of salt cod, a starter and a main, were a novelty and perhaps the standout pieces of the evening. Cooked and prepared very delicately, but with bags of mediterranean flavours to go with them: capers, taggiasche olives, fresh peas, super olive oil... Not less satisfying were tagliolini with a sort of ragout of freshwater fish (pike? , very intense, and the other main was the lamb, which we almost always have so much we like it. To finish on a high note, Piedmont hazelnut (the best parfait and an almond 'tartelletta ' ', both of them shining for the excellent ingredients (aside from the nuts, Valrhona chocolate... . Service is lovely and professional, and considering the quality prices are lovely too!
Another perfect dinner at this Locanda (see my previous reviews). Standouts this time were a 'creme caramel ' with fresh local mushrooms and sweetbreads, a pig cheek braised in beer (incredibly deep flavour), and a pistachio ice-cream. But also delicious were torlelloni (well) filled with local herbs and confit cherry tomatoes, a Guinea fowl with recurrant and a cream of celeriac, and the evergreen chocolate and coffee dessert. It 's hard to think of another place in the region that so well tells the story of tradition and locla ingredients, but that at the same time has embraced modernity. The room is charming as ever, service led by signor Danilo in the room is excellent, and both food and wine prices make this place incredible value for money.
