I enjoyed dining at Spring Cafe in Aspen, Colorado. The Rueben sandwich I had for lunch was delicious and filling, although a bit oily. I also tried their chocolate chip cookies.

I dined at Spring Cafe twice during my trip to Aspen. I tried the Rueben sandwich for lunch, which was delicious and satisfying, although a bit greasy. The chocolate chip cookie I ordered was on the dry and crunchy side. The next morning for breakfast, I enjoyed the tasty Blanca's Sandwich with the best tofu scramble I've ever had. The dirty chai latte I had was decent, but not exceptional. I highly recommend the tofu scramble at this restaurant, although it is a bit expensive, it's a great option for finding vegan food while on vacation.
The service at this restaurant was very slow and inattentive. I was disappointed that there was an extra charge for oat milk in my matcha latte, and the drink ended up being overly diluted. When I ordered the tempeh Reuben with sauce on the side, they forgot to include the sauce, making the dish quite bland until I requested it. The chips that came on the side were not worth the calories.
The Mocha with oat milk and Pumpkin Cinnamon Latte with oat milk were both very good. The Nachos were delicious, though cilantro would have been a nice addition for flavor. The Spinach and Mushroom Enchiladas had excellent flavors but could have used more sauce. The Sweet Potato White Bean Burger was fantastic! The soup of the day, Moroccan lentil, was good. The Spinach Artichoke Dip had a strange flavor that we didn't enjoy. The Peanut Butter Banana Oatmeal Cookie and Coconut Macaroon were both delicious.
