I have in my family the professionals of this regional culinary institution and I think I know how to recognize a good fries (not frozen, well golden to beef white, not fat). It is important to note that the result has exceeded our expectations: superbly crafted fries, accompanied by a delicious and refined homemade sauce (The mad is the name of the sauce). I'll go back without mistake as soon as I go to Arras to test the other wonders. Cake on the cake: the welcome is no longer nice and there is a good choice of excellent beers to accompany your serving.
