I had the pleasure of dining at Covalou, and I must say it was truly a wonderful experience. The ambiance is one of its strong points: quiet, welcoming, and very characteristic, with wood and stone elements that perfectly recall the Val d 'Aosta tradition. We were seated near the pellet stove, a detail that made the atmosphere even warmer and more pleasant. The owner immediately proved to be extremely kind and attentive, which always makes a difference. A much-appreciated gesture was serving the children first, who were definitely hungry: they devoured a tagliatelle with white ragù that, in their words, was to fly away. My wife and I started with two truly interesting traditional appetizers: an excellent Arnad lard accompanied by honey and chestnuts, a perfectly balanced pairing, and delicate and well-prepared Burgundy snails. For our second course, we chose beef slices to cook directly on the hot soapstone at the table, accompanied by vegetables: a convivial and very tasty experience. To conclude, the kids enjoyed a freshly made Nutella crepe, while we enjoyed a truly delicious house grappa. In short: a more than satisfying dinner in an authentic setting, with traditional cuisine and attentive, friendly service. Highly recommended!

Simple but very welcoming place, good food: super polenta concia as well as the crepes.
We had dinner here during our ski trip in Cervinia and it was one of the best meals I ever had in Italy. There were five of us and we were all very hungry after skiing, but the portions were generous and we left perfectly satisfied. Everything we tried was excellent. A special thank you to the gentleman who recommended a regional Valle d’Aosta wine for us. It matched the food absolutely perfectly and made the whole experience even better. I also have to mention the asparagus fondant (sformatino). It was absolutely phenomenal, one of those dishes you still think about days later. Wonderful food, great atmosphere and very kind service.
