Miàn Wū でん - 寒河江市

The restaurant is open for breakfast from 6:00 am, but it doesn't get busy until around 10:00 am. They are open straight through until lunch with no breaks. This was my first time dining here and I tried the soy sauce ramen. Even though it was my first time, I accidentally ordered extra oil, which made it quite intense, haha. The thick, chewy noodles soaked up the soup nicely. The price is on the higher side at 850 yen, but it's worth it for the generous portion size. The regular serving size is 300g, so those with smaller appetites may want to opt for the smaller size.

I decided to visit this place after several years since the previous "Oura" restaurant that used to be here closed down. I ordered the soy sauce ramen in regular size for 800 yen, and received free rice. First, I took a sip of the soup. It had a strong flavor of dried sardines and seafood. It wasn't the trendy super dried fish type, but it was mild and easy to drink, yet still brought out plenty of umami from the broth. I enjoyed every drop! As for the noodles, they were thick and had a good chewy texture. They looked like they might be heavy, but you could slurp them easily. They were the perfect texture for me with a good chew. I found out that the regular size I ordered was 300g, while the small was 200g, and the large was 350g. Even the regular size was very filling. Next time, I think I'll try the miso or "serious soba" ramen - whatever that is. I forgot to take a picture of the menu. Sorry about that.

"The flat, hand-kneaded noodles have a satisfying chewiness. The large, thick slices of chashu pork and finely sliced menma were delicious. The hot soup was also tasty. Although there is no parking, they have a partnership with the nearby Etchigoya Parking where you can receive a free 30-minute parking voucher."

夜勤明けだったので開店直後に伺いました。頼んだのは醤油ラーメン並盛。元気一杯な店員さんで感じ良いです。 肝心なお味も満足。出汁などの詳細は先生方にお任せしますが、ラードと思われる上澄みが蓋になりスープが冷めず、最後までお熱く食べられます。 最も個性を感じたのが自家製の麺です。加水率が低めかつ、不揃いで太めなこと 、茹で時間が短めなことから歯応えがあります。程よく塩味のあるスープをよく持ち上げるので上品な見た目とは裏腹にパンチのある一杯となってます。 この界隈では貴重な朝ラーメンできるお店ということでお邪魔しましたが、稀有な営業時間だけを売りにしているわけではない良店だと思いました。 山形駅近くに移転するご予定とのことですが、願わくば現在の場所での営業についても続けて欲しいものです。
