The attitude of the hostess who firmly refuses to recommend dishes when they are not at their best shows true professionalism and conscience. For example, when I tried to order live oysters, she refused, saying, "The texture is not good because they are holding eggs at this time." This is something you wouldn't know if she didn't tell you. Furthermore, when I ordered a grilled Hokke fish, they went to the trouble of starting a charcoal fire and carefully grilling it for that one piece.
