Quesadilla Recipe

First, go on ahead and preheat your broiler and grease up a baking sheet. Toss that chicken with some fajita seasoning and spread it out on the baking sheet. Pop it under the broiler for about 5 minutes until the chicken is cooked through.

While that's cooking, preheat your oven to 350 degrees F. Heat up some oil in a saucepan and sauté your green and red bell peppers, onion, and chicken until everything is nice and soft. This usually takes about 10 minutes.

Now, lay out your tortillas and spoon some of that yummy chicken and veggie mixture onto half of each one. Sprinkle on some Cheddar cheese, bacon bits, and Monterey Jack, then fold them in half. Place them on a baking sheet and pop them in the oven for about 10 minutes, or until the cheeses have melted.
