Meatballs Recipe

First things first, cover a baking sheet with foil and give it a little spray of cooking spray. Now, in a small bowl, soak some bread crumbs in milk for about 20 minutes. While that's doing its thing, heat up some olive oil in a skillet over medium heat and cook those onions until they're nice and translucent, just like my little ones' cheeks after a day in the sun.

In a big ol' bowl, mix together your beef and pork. Then, stir in those cooked onions, the bread crumb mixture, some eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese. Mix it all up real good with a rubber spatula, cover it up, and pop it in the fridge for about an hour. This will give those flavors a chance to dance together like my kids at a school concert.

When you're ready to get cookin', preheat your oven to 425 degrees F (220 degrees C). Now, dampen up them hands of yours and start forming that meat mixture into little balls about 1 1/2 inches in diameter. Pop 'em on that baking sheet and let 'em bake in the oven until they're all browned and cooked through, about 15 to 20 minutes.
