Chana Masala Recipe

Step 1: Heat up some olive oil in a big pot on medium heat. Throw in some chopped onion and cook it until it's soft, about 5 minutes. Add in some minced garlic and cook it until it smells good, around 1 minute.

Step 2: Open up a can of chickpeas and dump them in the pot, liquid and all. Squeeze in some lemon juice, then sprinkle in some coriander, cumin, garam masala, and curry powder. Stir it all up and bring it to a boil.

Step 3: Turn down the heat and let it simmer, stirring every now and then, until most of the liquid has evaporated and the sauce has thickened, which should take about 15 to 20 minutes. Toss in some spinach and let it cook until it wilts, around 5 more minutes.
