Luckily, we found a door slightly open in the shuttering. When we entered, we found ourselves in a bakery with people busy baking pastries. I was disappointed by the canelés I tried at Borough Market. I was excited to see them piled up nicely and at an affordable price, but unfortunately, they did not meet my expectations. The texture was too doughy, rather than soft and fluffy as I had hoped. What was most disappointing was the lack of a light, crunchy caramelization on the outside.
