Exceptional! In addition to the words: it is a true culinary experience, a trip to northern Japan, a discovery of the true nigiri sushi and the exception of taste and refinement. We were also accompanied by a couple of Japanese from Paris .. and especially from northern Japan and said to find all their universe here at Hinoki We had to taste more than 15 different fishes and shells, from the good to the one, passing through the exceptional to the dessert... The quality of the products is indisputable, and the sushi are worth a visit. The omakaze are good but not transcendent, especially in view of the price. Experience: a unique menu, starting with omakaze, then sushi. 12 covered around the bar. During the omakaze we are in front of an empty counter, a little strange as an atmosphere. Then comes the master sushi. Meal too long: 4 hours. We're making a sushi-like deal, but it's so long that we're wondering if we can have a drink. The master sushi is very interesting but speaks... very much and does not cook when talking. We wonder if we're at school or at the restaurant. So we wait 15 minutes for him to speak and serve 1 to 1 the sushi to each person. To conclude: the omakaze are good lais nothing crazy, exceptional sushi but a big problem of rhythm. Fortunately, customers were nice to chat and spend time. For a menu in the 180 euros, it makes a lot of points to improve.
