On August 15, I chose the calf's ris that was on the menu. A cook should know that the fibrous skin that covers the calfskin should be removed before cooking them. Out of the way, I chewed a little **** rubber. Too bad, because the girolle sauce was good. Provencal Tomato Tatin and Provencal Tomato in vegetable accompaniment!
