Llegamos a Olivas y Especias por un impulso. Después de más de 4 horas de viaje desde Bogotá para llegar a Villa de Leyva, nos encontramos con una feria de camiones que hizo que el viaje pareciera eterno. Ya veníamos con la idea de comer pizza aquí, ya que en otra ocasión mi hermano había estado y la calidad lo merece: pizza en horno de leña, en tres tamaños diferentes y una variedad de ingredientes para elegir, incluyendo la longaniza local. El restaurante tiene alrededor de 10 mesas, con una decoración sencilla pero situado en la Plaza Mayor, lo que hace que el entorno sea especial. También ofrecen una variedad de platos italianos como pastas, lasañas, canelones y panzerottis.
La variedad de sabores es muy amplia y estas incluyen ingredientes gourmet como chorizo español o auténtico pepperoni italiano. La masa es crujiente y con un aroma muy especial que se lo da el horno de leña. También hay opciones vegetarianas y aunque no probé la lasaña, se veía deliciosa.

The variety of flavors is very wide and these include gourmet ingredients such as Spanish chorizo or authentic Italian peperonni. the dough is crispy and with a very special aroma given by the wood oven there are also vegetarian options and although I did not taste the lasagna, it looked delicious.
