What Kovia Phan doesn't like about Fat Noodle:
I hesitate to give this four stars. Ideally this is a solid 3.5 out of 5. The venue is bright, vibrant, clean. Its a unique and welcome theme. The food is kind of a miss but not completely off putting. I personally, like my soup especially noodle soups (ramen, udon, etc. to be served piping hot. There customer service, was amazing and I got my meal within 5-10 minutes. While I can't speak for their other food, there FN ramen is terrible. Now I order ramen all the time so I know the broth is supposed to be salty. But, its like they poured extra salt into the broth before serving. They use noodles that you would use in pad Thai. The first couple bites are decent but, then you get this gross aftertaste. The only good part about it is the mushrooms and pork. But, even then they don't give you enough pork to start off with. 30 minutes after eating I was sick. I'm sure I would of been fine if I went with one of there other dishes.
I’ve been a regular here for a few years now. Bao buns are always bomb, and the ahi tuna bowl is delicious. It’s always clean and peaceful, probably my favorite lunch spot in town.
Staff was super friendly! Decor and atmosphere is nice and clean while the pricing is inexpensive . Got the miso shiitake and the spicy miso with a friend and we barely managed to finish the food so I’d say they give pretty big portions

This place is one of those restaurants that serve it lukewarm, or at a temperature ready to be eaten right away. The broth is rich, earthy, with strong ginger notes. The noodles have good texture. But again, the broth was definitely shy of temp. There was also some grit at the bottom of my bowl which ended my experience on a disappointing note. Perhaps they shouldn't operate a ghost kitchen on the side and focus on improving their food.
