Before COVID, we dined at this restaurant several times and always enjoyed excellent food and service. However, under the new ownership, it seems they are cutting corners. On July 30, I went to try the catfish. We ordered a catfish plate, but all we got were overcooked and cold filets that were difficult to cut. The collard greens lacked any bacon bits, so I inquired about it. I was told they do use bacon, but I pointed out that I couldn't see any, to which they finally admitted they only use bacon grease now. Unless there are significant changes, I won’t be returning!
Trinity Cafe has new owners, and the food is quite good with new chefs on board. While there's still room for improvement, I believe more people should visit to experience it. It’s a truly nice restaurant, and the staff does an excellent job serving tables and maintaining cleanliness. The cooks are doing a fantastic job, and the food is some of the best you’ll find in Texas, in my opinion.
