The Spirit of a Quality Brasserie After the fried onions as an aperitif, we ordered four different dishes: excellent tripe with fries, a traditional Toulouse sausage with aligot (a cheesy potato dish), an 8-centimeter-thick steak, and for me, a magnificent Aubrac ribeye. The tenderness of this meat was truly exceptional. I usually eat meat without sauce! But this time, I made the mistake of dipping a fry in the homemade pepper and Roquefort sauces and finished both ramekins. And what a pleasure it was to be served on the terrace by people who were both so friendly and professional. BRAVO for your work! And thank you for maintaining the spirit of a quality brasserie.
