The Pink Coconut Cancun

Cute little vegan/vegetarian restaurant tucked away on the second floor in the back of a spa with pretty bay views. We stopped in at 6pm and were confused at first as you walk into a full service spa. The owner/manager tried her best to get us to book a massage. They must of been slow as she came over several times with better offers. As enticing as they were, we just wanted to eat. Our server recommended the vegan falafel wrap and vegan falafel tacos, that’s what we ordered. Along with the chips and guacamole. We enjoyed a beautiful sunset while we waited (see image). The food came out fairly quickly. We were impressed with the presentation. It was stacked and impressive in size. It tasted as delicious as it looked. We ate rather quickly as we were the only ones in the restaurant and they stopped serving at 7pm. Our server was very friendly and attentive, I think his name was Emmanuel? The food was fresh and tasty. The price was also very reasonable. Some areas of opportunity would be to reprint the menus and offer some juices/mock tails, not just smoothies. But overall, this spot is a hidden lil gem. We would definitely come back and perhaps take the owner/manager up on those offers for a massage. It’s important we support the vegan establishments whenever we can…

Such good vegan food! Açaí bowls, smoothie, falafel wrap and chilaquiles all delicious! If you love vegan food try the Pink Coconut-you won’t be disappointed
