I stopped by Cà Phê Rang on a whim and was seriously impressed. The pho was incredible—rich, flavorful broth, tender meat, and fresh herbs that tied it all together perfectly. Everyone was hyping this place up so I went in with pretty high expectations. Got a spot for dinner and ordered a Vermicelli Noodle Bowl with Roasted Pork. Pork was incredibly tough and I had to spit out the skin a few times because it was so hard. Their pineapple dessert was good though. As a self-proclaimed phoholic, phở đặc biệt is always my favorite. The bowl I ordered here visually very promising — the noodles seems to have the right texture, the beef looked fresh and well-prepared, and overall, everything appeared delicious at first glance. However, the experience was let down by one crucial element — the broth wasn’t hot enough. In fact, it wasn’t even warm. No matter how good the ingredients are or how balanced the flavor might be, pho simply doesn’t work without a steaming, piping-hot broth. That temperature is what brings everything together, and unfortunately, this missed the mark. So while everything looked good, I can’t say it was good — the lack of heat diminished the entire experience. On a brighter note, the pork bánh mì was delicious — the pork was flavorful and fatty, with a well-balanced marinade that brought everything together. The iced viet coffee was a pleasant surprise — cold, refreshing, and with that rich, sweet flavor that makes it feel more like a dessert. A nice way to end the meal.
