Beets were roasted Crow’s Pass Beets with tangerines, pickled red onion, Shaft’s bleu cheese, local wild arugula, and blood orange vinaigrette. The beets were perfectly cooked to bring out their sweetness. The tangerines were fresh and bursting with sweet citrus flavor. The beets were perfectly cooked to bring out their sweetness. The tangerines were fresh and bursting with sweet citrus flavor. The pickled red onion wasn’t too vinegary but enough to counteract the strong onion flavor. The blue cheese was amazingly creamy and had a nice bite to it. The arugula was peppery and just a tad bitter. The vinaigrette brought everything together for a balanced dish. Perfectly executed! Thumbs up, way up!
