This is a great restaurant located in the Hyatt Regency. They offer a vegan version of plov (listed as vegetarian on the menu, but confirmed by several employees to be vegan) as well as herbal kebab/sashlik. Most dishes range in price from 50,000 to 70,000 som. I recommend stopping by to try their delicious vegan plov, which can be hard to find in Uzbekistan. Khiva at the Hyatt residence is an excellent option for dinner. The service is outstanding, and the food is delightful! Watching the chef cook right in front of you adds to the enjoyable and relaxed atmosphere. The Plov, priced at under 5 Euros, is generous in portion size and will leave you completely satisfied.
The food here is incredibly tasty, I highly recommend it.
I ordered the vegetable plov and Lobio, specifying to the waitress that I am vegan. They initially brought me egg washed bread and yogurt, which I had to send back. They replaced it with vegan bread. The plov looked clean, but I discovered a piece of meat in my beans. They made me a fresh one, but it took some time and they forgot to replace the other food on my plate that had been taken away. The manager apologized, offered me a drink and a bowl of fruit, and removed most of the items from my bill, which was a nice gesture. My updated review on 2022-05-02.

While traveling throughout the country, you may come to realize that many places simply remove the meat from their regular plov and cook it with animal fat, making it difficult to find a true vegetarian option.
The city of Tashkent is known for its cleanliness and cool atmosphere, and the Hyatt and its restaurant embody these qualities with a touch of luxury. The food, especially the Plov and Kebab, is delicious.
