It is the kind of cooking that feels both modern and rooted in the region. The venison was particularly memorable. It was remarkably tender and prepared with a technique that brought out a depth of flavor I hadn't encountered before. The dessert was another highlight, featuring rhubarb in three distinct ways: as a sorbet, a jelly, and a compote. The contrast in textures was impressive. To finish, we were very pleased with the selection of local wines, which were carefully chosen to complement the menu. It was an impressive culinary evening, and I would certainly recommend a visit.
