I visited Marotta Ristorante after a morning at the Royal Palace of Caserta, driving out to its setting in the frazione of Squille amid the verdant hills of upper Caserta. On arrival I was promptly guided to the entrance. The restaurant is an intimate space of just a few tables, set on the upper floor of a building that also hosts events. As I came on a weekday afternoon with only one other party present, the service and the explanations behind each dish were thorough, unhurried, and exceptionally attentive. The dining room is contemporary and minimal, built around a quiet, achromatic palette that lets the food take center stage. The meal more than lived up to its reputation. The opening dish was a small marvel—strawberries crowned with flower petals for spring, green beans hinting at early summer. The breadsticks were superb, the herb pasta genuinely original, and my favorite was the playful yet refined flower barbecue. I could also detect Japanese touches woven into the cooking, such as kombucha (kelp tea), which I found especially delightful. Since I had to drive, I chose the non-alcoholic pairing, and the tea was so good I had two servings. I also learned there is no dedicated pastry chef, and the desserts use no sugar at all, drawing their sweetness entirely from natural sources—a thoughtful approach in keeping with the kitchen 's respect for natural ingredients. Afterward, Chef Domenico and sommelier Anna walked me through the dishes. I learned the chef had interned at Nihonryori RyuGin, the three-Michelin-starred restaurant in Tokyo, and our conversation about Japanese and Italian cuisine was fascinating. The cuisine, interior, and service were all refined, and I enjoyed every moment. Highly recommended.

A truly unique culinary experience. At the end of Anna's expertly guided journey, all the senses are satisfied. Unique flavors, aromas, and colors. Compliments to Chef Domenico and his entire team.

An unforgettable experience. The chef is truly professional yet genuine, and we enjoyed chatting with him. The dining room staff made our day even more wonderful, pampering us from start to finish. The food was stellar, nothing more to say. I hope you continue to go further because you truly deserve it.

Chef Domenico manages to make you experience every dish with all five senses… I tasted flavors I'd never tasted before… I'll be back to try more of his dishes… Compliments also to Anna and the other staff, who served us and explained the story behind each of the chef's choices. Thank you

Love of food, hospitality, and conviviality. Impeccable, interesting, flavorful dishes, perfectly aligned with the chef's vision, evident in every detail. A superb demonstration of high-quality cuisine, without the use of showy dishes, but rather achieved through study, research, and care for the local area. The good food is complemented by the pleasantness of the entire staff: Anna, Dodo, and chef Domenico are friendly and welcoming. On tiptoe and without ever being intrusive, they were present and shared the meal with us without ever feeling affected. You leave wanting to return to discover new flavors in a friendly atmosphere. The alcoholic and non-alcoholic pairings are highly recommended, as they truly complement the dishes. Since you can't try both, I recommend choosing the non-alcoholic version to truly discover fermented beverages and kombucha.
