This place is truly unique and has a great vibe. The banana muffin was incredible! My wife tried the butterscotch latte and the blueberry muffin, and both were fantastic.

The Americano was decent. The nitro cold brew was enjoyable. The staff was extremely friendly, and it’s a nice spot to unwind and chat. They offer their own coffee, but I didn’t see any opportunity to sample or brew it; they only had espresso-based drinks and cold brew available.

I visited Texas to see my sister, and we had a fantastic time in Old Town Springs, where we decided to grab some iced lattes. The place was not only charming, but the other guests were friendly as well. Angela, the staff member who assisted us, was exceptionally courteous! Our lattes were perfect, and she made both my sister and me feel truly welcome. Thank you for such a great experience! We’ll definitely be back soon!

Hubby and I visited today we came to the Old Town Spring for the British shop (also amazing! We came in, had a few beers and loved the environment and the bar call was so beautiful! We haven't found their name, but thank you for feeling so welcome! Will be back :

This place has changed... atmosphere is not the same and friendliness is lacking. We went this past weekend and felt the quality has gone down for what you pay for. My sis in law got the butter pecan drink and they literally just scooped some butter pecan ice cream and didn 't blend it together, which I thought was strange. The drink also wasn 't even filled up all the way 3/4 full. My drink was not the greatest either the coffee or caramel tasted burnt. I asked if a drink named Thanos could be made into a frappe and was told no because it would just be a vanilla frappe. That makes no sense... I thought maybe something in the drink itself couldn 't be blended. My SIL asked if she could get something else because her drink was not good and was told a flat sorry, no. Not even a refund was offered or a I 'm sorry your drink tasted bad. Honestly felt that I could have gotten a better frappe at McDonald 's instead of the $8 one I paid for here.

Warm, welcoming staff often shine, though understaffing and uneven drink quality have led to long waits and mixed morning‑snack reviews. The spot’s intimate, community‑oriented vibe and amenities like a patio, couches and games make it worth a visit, but expect spotty Wi‑Fi, limited parking and occasional service inconsistencies.

More like Trilogy of disappointment. First time visit and had an absolutely disappointing experience, waiting over 30 minutes for basic coffee drinks. Based on our group consensus, the drinks were overpriced for lackluster taste and consistencies.This coffee shop is located in historical downtown Old Town Spring and I was looking forward to trying their coffee, especially on a quiet Sunday. The building itself has a rich history, updated and it looks like this would be a good experience. Unfortunately that part didn't come to fruition.Here were the 3 main issues:1) There was only one person working. Understandably she was doing the best that she could, but, the issue was that she didn't manage her time well. She kept taking new orders/payments from customers as they walked up to the counter, but, never actually proceeded to make the drinks. And when she did sporadically proceed to make the orders, they were in disorder, so people that came last were served their orders first.2) The drinks qualities were underwhelming. They lacked in taste and made in a hurried fashion, resulting in poor/random textures. In my opinion, I got $1 drinks, but, paid about $8 for each.3) The wait time was the worst. It was literally over 30 minutes to get the order served. And on top of that, when I asked about the order status, I felt that it irritated her that I was even asking . I remained calm but inside, I was irritated because I saw her making hand drinks to other people that were behind me in line...Overall, I can't recommend Trilogy Brewing because it's was very disappointing. Based on failure to meet just the basic criteria, I give this place the big thumbs down. It was evident that basic process of orders (in order) and staff management is lax. Waiting for over a half an hour for a mediocre, overpriced drink isn't worth it.

One of the coolest coffee shops I’ve been to in a long time. It’s right in old town spring. Cool little set up on the inside. Love the wood floors. Neat little stage for a band or open mic. Friendly staff. No Apple Pay at this location, just a heads up. Cold brew was good. Gotta come back to try something else. Good job!

The cutest little coffee shop! Some of their customers will occasionally hop on the piano or guitar and serenade the whole shop, very much enjoyed my day here.

I initially heard of this brewery while watching YouTube videos about places to visit around Houston and decided to stop in while exploring. It's a historic building that has been redecorated to be a hip coffee shop, brewery, and CBD shop. The seating is small and intimate and it's a stage for live music but is definitely the kind of place you'd study and drink coffee at all day with the comfortable seating and accessible power outlets. It was initially quiet when I arrived, which was nice for it being Sunday and the day of the Super Bowl. I came in a group of five and we ordered four of the blended drinks and one iced latte. Unfortunately, two drinks were finished after about five minutes of waiting, then another party of multiple people arrived and it was over 25 minutes until we received the other three drinks. We watched the party that arrived after us all receive their drinks while waiting. We had been there so long that the dining area had become busier and there was a long line. We were sitting at a table near the counter, so we had view of the staff/cashier. After 20 minutes, we asked where the three remaining drinks were and told that they were working on them. Two more drinks were brought out and we were still missing one. After another 5-10 minutes, I decided to go up to the counter and ask where our final drink was since my group wanted to visit the other tourist shops. I was told that there was only a single barista, they were short staffed, and that if I would like to apply, they are hiring. From the time we arrived to receiving our last drink, it had been nearly 45 minutes.

Good coffee. Morning food (muffins) is meh, and lacks depth or originality. Service quality is sporadic: young employees lack awareness of customers and often are hidden in the back and lack enthusiasm and conversational skills to bring the shop a really community space. WiFi is poor and often simply drops altogether.Patio space is nice in its bareness but the interior is filled with cliches (like all Old Town Spring) and not helpful or inviting. Not sure if fabric chairs and sofas are being cleaned. Parking is very poor (like all OTS).Still, this is one of the few indie coffee shops for miles and I 'll return. Trilogy has promise if it left the OTS vibe and focussed on best coffee and a much better morning snacks.
