This is my second time coming to this restaurant. The first time I came wanting soy sauce ramen but they only had salt ramen, which was just okay. Today, on my second visit, I finally got to try the soy sauce ramen and it was delicious. The Kujou green onions and roast pork chashu were tasty. The toppings and noodles matched well with the soup, and I think the overall quality is quite high. However, the noodles were either cooked too long or naturally soft, which was a bit disappointing as they were too soft. If the noodles could be cooked firmer, there would be nothing to complain about. Despite this, it was still delicious. I will come back again.
On April 28, 2022, I tried the "Kakeramen" and it was just average at 640 yen. The previous owner, who studied under the late ramen master Sano Minoru, founded the restaurant in 1998. In 2020, the current second-generation owner took over, allowing the previous owner to focus on mentoring the next generation. What sets this restaurant apart from others that share the same roots is its unique style of rotating between salt and soy sauce-based menus every week. On the day I visited, it was the salt menu, which was perfect for me as I had wanted to try salt-based ramen. Everything from the texture of the noodles to the amount of toppings was spot on. The speedy operation, reflecting their dedication to serving customers as quickly as possible, was impressive. Despite the fast pace, the layout of the restaurant was also well thought out. Overall, I was truly impressed.
Today was Salt Ramen day. The pork soup was delicious with straight, firm noodles that were easy to eat. The flavor was rich and there was a poster of Sano-san that made me feel like I was being watched.笑.
