I opted for the boiled and dried ramen with thick noodles. I hesitated between thin noodles, but the thick curly noodles turned out to be the right choice, with a firm texture and delicious chewiness. I was skeptical about the pork fat, but it paired well with the lightness of the boiled and dried soup. The oil noodles also had a strong boiled and dried flavor. If you're not a fan of heavy oil noodles, this place might be a good option for you. I recommend waiting to break the egg yolk in half and then mixing it in halfway through to enjoy a change in flavor. I like my noodles with extra chili oil, and a dash of black pepper also complements the dish.
