Even after the appointment has been agreed upon and the food has already been clarified, you still get a cancellation of the appointment even though everything is fixed! The problem is if you only get wind of it shortly beforehand. So I wouldn't rely on long-term planning here. You are only in second place and as soon as someone with a bigger wallet shows up you unfortunately have to give way.
