The chef surprises you with every course which truly enhanc... read more What an amazing experience! Truly worthy of a 2024 Michelin rating. It is a fixed menu with no menu. The chef surprises you with every course which truly enhances the experience. There were so many unique flavors in the 5 course menu I can’t even fully describe. The “menu” only had a list of their over one dozen suppliers so that should give you an idea of the vast array of ingredients. We were seated in their lovely courtyard. One course was veal sweetbreads. It was tender and delicious with some crispiness on the edges. I found out later this was pancreas but have no fear. The crab entree was amazing. Not sure if it was proper, but I couldn’t resist using bread to wipe and finish the precious sauces of each course. Some entrees had a rich smoky flavor, including the Tom Dory fish dish. Another example was a dip of shaved chocolate for dessert. It was amazing. Turns out it was ground and roasted cocoa bean husks. Wow, who woulda thunk that was a thing? The service was awesome and the staff was cheerful, polite and patient with our many questions. They were apologetic of their English skills but I will say their English was way better than my French abilities. : Don’ be in a hurry. We started at 8:15 and left close to 11.

We would like to emphasize that the chef 's cooking was fabulous. The flavors, presentation of the dishes and quality of the products were exceptional. We appreciated the originality and finesse of each plate. However, we were somewhat disappointed by certain aspects of our experience, and we would like to share them with you in a constructive spirit. Firstly, the first course was served before my husband had finished his appetizer. As we had opted for the wine pairing, it would have been better to wait for him to finish his beer before starting the meal. We found some terms used by staff to be inappropriate. For example, mentioning the word boring , forgetting the name of an element on the plate, such as meringue, the lack of discretion when transmitting a message to the kitchen. When it was time for cheese, we asked to share a plate. We were informed that we would only be allowed 3 cheeses because we were sharing. At €18 a plate, a small piece of each cheese wouldn 't have changed much. Finally, the toilets were not very clean and there was no soap left. Despite these inconveniences, we have good memories of your restaurant but we will probably not repeat it. THANKS
