I went there after seeing it on YouTube, and the freshness of the burrata cheese was definitely different and went well with the tomatoes. The raw fish was fresh, but I didn’t notice much of a difference. I heard that the carbonara here was made in a traditional way, but the big difference was that it had more sauce and it had something like bread fried in oil instead of gizzard curry. My favorite restaurant in Roma. You need to book a reservation but it is worth it. The quality of the ingredients is out of this world and the place is very charming, you can see them assembling some dishes with cold cuts.
