Chai and India are pretty much the same thing, you cannot have one without the other. In fact everywhere you go you are offered chai and so it does not take long to become an expert in this almost mystical tea. So when I heard from a friend who has lived in Pushkar for 6 years that there is a great chai shop that you must check out , I listened. And Sandeep most certainly delivered. Arriving at his cafe next to the base of the mountain of Sarvati temple, it looks like many other cafes you pass along the way, but rest assured that Sandeeps is a little different in what it serves to you. Sandeep boils the chai with you explaining his method and serving up 7 different versions of a delicious fresh spice and water chai (no milk) to allow you to taste many different flavours with the base being his 'magic pinch ' of his families own masala mix. Be sure to ask also for the masala chai version with milk as that is definitely worth checking out also. And if you remember, bring a small bar of milk chocolate and he will make for you a special chocolate chai, sadly we didn 't know this prior but I do have his spice mix and his method tucked up securely in my backpack. Sandeeps chai has a lot of depth of flavour and there will be a flavour combination he serves that will resonate with you. Mine was the rose petal chai and the tea boiled in the pot version. He also sells prepackaged pots of his masala chai powder for a reasonable price.
