We usually start with salad and soup, followed by sushi appetizers that are consistently delightful. The lobster and filet are outstanding, and their rice bowl is simply phenomenal! We prefer rice over noodles, and Suehiro’s version comes with cooked eggs, carrots, soy sauce, a touch of butter to give the rice the perfect texture, plus some mushrooms and squash mixed in.

We prefer rice over noodles, and Suehiro’s version comes with cooked eggs, carrots, soy sauce, a touch of butter to give the rice the perfect texture, plus some mushrooms and squash mixed in. We highly recommend Suehiro and hope you enjoy it as much as we do! Also, we've been bringing our twins since they were born, and now we take our new baby too, and they've always been very accommodating to families with kids. They're truly welcoming!
This place is delightful and impeccably clean, offering traditional sushi with a friendly staff. I've tried every sushi restaurant in Pueblo and Pueblo West, and this one stands out as the best. We also enjoyed ribeye and scallops, both seasoned and cooked to perfection.

Delicious food and friendly service! I’m so glad Pueblo has a restaurant like this. We’ve been looking for something similar ever since we moved from California last summer. I highly recommend it!!!
The food was incredibly delicious, and the atmosphere truly captures the essence of authentic Japanese culture! It's a fantastic spot for a special dinner, with grill tables and a unique tatami seating area for private gatherings. I can't wait to return!
