There are few restaurants that can devote themselves to a bourgeois, German cuisine, so difficult to define what is typical German cuisine. I think Tim Raue and Christopher Alarm are doing this very well. Here you can see enough tradition and also typical ingredients, but always with a certain modern kniff. Sharp, as one would expect it in roughness, doesn't matter here.
