However, the of whole grain flour is too high to recreate the texture of a baguet... read more Pelican makes very nice sourdough bread with a high percentage of whole grain. However, the of whole grain flour is too high to recreate the texture of a baguette what they call a baguette is baguette shaped but not actually a *baguette*. The croissants are also sourdough and made with a high percentage of whole grain. That's tough to pull off. I'm onboard with the cause and admire the effort but for me it doesn't quite work. Instead of being airy and light, they feel a little hearty and heavy. I can taste a little bit of the sourness which is just not what I want in a croissant.
