I'd been to SALT for Valentine's Dinner, and they did absolutely amazing. So, I was excited for NYE, and it was a fairly good experience but not amazing. The food was good, but I wouldn't say excellent. The drink pairing was well done, but smaller pours, for sure. In fact, each drink seemed to be half. In this economy, I understand why they'd do that. Food was not tasty at all. Really bad. The total with tax for two people was 270 dollars. Understand it was new years and a prix fixe dinner but felt like dinner inside a Hampton Inn. Didn't realize this was inside a Hilton and the atmosphere was terrible. Big disappointment plus it was our anniversary. People running by in swimsuits. The worst part was the meal itself. Went there for Valentine's day. They did have a special menu along with regular menu. V-Day menu didn't interest us. Ordered off regular menu. Food was actually real good, service was really good and food came out quick. This is the first time we have been there since the remodel and honestly don't like the remodel/rebrand. Food was good but for what you get for the price wasn't that spectacular. When the restaurant was H2O it was much better. The seating area now feels boxy and more noisy with the addition of a wall in the side. Overall an ok/good experience but probably won't go back to it. Should have kept it the old way IMO.
We had brunch there, which was excellent. The food was great, the services was attentive, and Chef Johnny came out to check and make sure everything was perfect. It wasn 't cheap, but it also wasn 't nearly the most expensive option in Pensacola. We ended up spending the entire day at the hotel because of a parade that restricted traffic away from the property. Consequently, we had dinner there as well. The food and atmosphere were great, and the service/attention were top-notch. Again, it 's not cheap, but the quality matched the cost. I wouldn 't call it value, but it wasn 't inappropriately priced.
Even the kids (7, 8) liked it! They were very welcoming, and made the 7y.o. feel special for his bday. Chef Johnny was very concerned with how we liked it. The habanero maple syrup was great on the chicken and waffles BLT!

Price seemed fair for the experience, but I wasn't wowed. I wish they'd added some decor or ambiance for NYE specifically. Also, maybe some warm desserts, as all 3 desserts were chilled. The Christmas trees were absolutely adorable, and the hotel was quiet and pleasant. I gave a 5 star ambiance rating. Our waitress was pleasant and attentive. Overall, it was a pleasant experience, just not absolutely amazing.
