Je n'ai pas la prétention d'être critique gastronomique, il s'agit seulement de mon ressenti.Gestion "des cuissons" très particulières, la tige du chou fleur, qui n'est pas la partie la plus goûteuse de ce légume était ni cuite ni crue... la viande (volaille), elle aussi, était à la limite du cru. L'assaisonnement était, à mon goût toujours, trop prononcé. C'est la 1ère fois que je préfère le sucré au salé dans un restaurant.Bref très déçue par ce restaurant. Je ne referais pas

Le service y est plaisant et raffiné tout comme ce qu'il y aura dans votre assiette. Il reste de bonnes adresses à Paris, et Lucas Carton en est une.

La formule marché est abordable, le cadre somptueux et les plats sont raffinés. Service tout à fait comme il faut. Délicieux dîner (Le menu du marché du Lucas à 45€) dans un décor de rêve !! Les plats étaient Délicieux, Savoureux et un personnel souriant et aux petits soins. Nous avons apprécié que le marché du Lucas n'est pas annulé notre réservation. Big up à eux. J'ai passé une Soirée Magnifique

かつてミシュランの三ツ星を長きに渡り維持し続けた名門のレストラン『Lucas Carton』。そのレストランに、シェフ『ジュリアン・デュマ』が2014年に就任し、早くも星を取り... read more かつてミシュランの三ツ星を長きに渡り維持し続けた名門のレストラン『Lucas Carton』。そのレストランに、シェフ『ジュリアン・デュマ』が2014年に就任し、早くも星を取り戻す快挙を成し遂げています。彼の料理は、とにかく天才的な火入れが料理を昇華させる、と個人的には感じています。美味しいのは当たり前なんですが、旨味を絶妙に引き出す火入れが最高で、薫りがさらに引き立ち、口のなかでそれらが混ざりあい、良さを引き出し合い、そして奏でるハーモニー。ジビエ(※当日は鹿)は臭みなんて一切なく、ロゼなのにこの薫りと旨味はまさに天才的。個人的には、カリフラワー、チーズとカリフラワークリームがとにかく旨かったです。カリフラワーをバターで丁寧に何度も何度も回しかけ、濃厚な旨味いっぱいにするこの料理は彼のスペシャリテとのこと。当日は怪我でソムリエさんがおやすみゆえ、ワインの評価はできませんが、ここには立ち寄る価値がある、個人的にはそう思います。

A pleasant setting and a team in the room with little care, listening and able to adapt very quickly (e.g. for us on a riddle agreement on red on which we were not receptive, the sommelier immediately changed and we loved.
