The chef takes great proud of preserving Panamanian native vegetables, fruits and traditions which is such an amazing endeavour. If you're up for an culinary adventure this is your place. I don't know what Michelin is waiting for to award them. Incredible.

Chef Hernan was very patient with all of our questions about his innovative techniques and his references to local and historical cuisine. We loved also interacting with and meeting his mom. Definitely make a reservation here if you're in Panama City and you won't regret it.

We were pleasantly surprised with an overwhelmingly exquisite culinary experience (and we currently reside in Manhattan, NYC). The 10 course tasting menu was more than enough food as was the wine pairings. Each dish was thoughtfully created with elaborate ingredients and presentation. The Chef cooks everything on a coal fire grill outside. We sat at a table by the window overlooking the grill and were able to watch our meals being prepared. The food is organic and kosher. Every bite was full of dynamic creation. The red clams, aged duck and sancucho were beyond amazing. I have no complaints other than having an abundant amount of great food. This is certainly Michelin star worthy dining. The ambience was a rustic and trendy modern vibe. Best restaurant in Panama thus far. We highly recommend and will certainly return! I loved the food and the fact that you get the informations around what is in your plate. The accord between plates and drink was an absolute hit. Quality products and an experienced and passionate teams make a unique culinary journey. Loved the local aspect of the food, would have loved to drink local water rather than imported italian water. A small suggestion, you should heat the plate to have the food served hot and kept warm during the degustation. I can only recommend and encourage everyone to visit the place and enjoy their excellent cuisine.
