Meander Riverside Eatery opened three weeks ago, replacing a restaurant we used to love. We had high expectations for the new restaurant and we were pleased that they did not disappoint. Despite being a new establishment, their taste palette is mature and impressive. We tried the ELT, a vegan twist on the traditional BLT with aubergine, and it was delicious, especially the sauce. We also enjoyed their greensalad and chalkalate made with local quinoa. The owner, Charles, is charming and ensures that there are always vegan options on the menu. The staff was knowledgeable and accommodated our dietary needs. They are happy to be in Pagosa Springs and are looking forward to growing their business.
