We were last with Aan de Poel and Haerlin in Hamburg, perhaps we expected too much. Since the prices in Paderborn are also so chosen, you should also bring more to the table as owner. The drinks were qualitatively as antique as the menu. The waiting period between the 3rd and 4th course of more than 60 minutes was extremely unusual and without a comment on it from the kitchen or service it seems unprofessional.
